You may expect Germany’s most acclaimed culinary masters to set up shop in the biggest and most sought after cities—Munich, Berlin, or Hamburg. But in fact, Germany’s Gault Millau Chef of the Year 2016 takes up residence in the nations 14th largest city: Leipzig.
Say hello to chef Peter Maria Schnurr…

Described as wildly outspoken and creative—avantgardist, an artist, a tight-rope walker and a mad man (all names he embraces)—Schnurr has been cooking up culinary works of art high above the city rooftops (100 meters to be exact) at his restaurant FALCO since 2005.
With his leadership, the acclaimed eatery was awarded a Michelin star just 3.5 years after Schnurr took over. It was also the first high-end restaurant in former Eastern Germany to be awarded two Michelin stars.
The FALCO experience
Based on the foundation of French cooking, Schnurr expertly brings together flavors that “don’t go together on paper”. That’s his signature in fact. Each step of the way, his work reflects a true passion and energy that is unmistakably authentic.
And just as noticeable with his culinary masterpieces is the discipline and focus put towards achieving perfection—no gastronomic mediocrity welcome here.
“This atmosphere, this view, this team, this kitchen,” says Schnurr, “here it is all about input, precision and quality without compromise – in all areas of the restaurant. I want 100 percent from everyone and everybody – or nothing at all.“

Out of a total 20 points, Schnurr got 19. His courageous and independent style, including spray aromas and innovative parings won over the judges.
